Delicious Christmas Cookies
I’ve called these Delicious Christmas Cookies because I first made them as an offering for my final yoga class of last year and their almond base reminds me of marzipan which reminds me of Christmas. Plus it’s a friendlier name than the slightly uninspiring one under which they are listed: Gluten-Free Almond Cookies. So, Delicious Christmas Cookies they are.
Either way, you will be amazed at how delicious they are, whether you observe a gluten-free diet or not or indeed, whether it’s Christmas or not.
My entire family – decidedly sniffy about anything *free from* – all loved them, and you can’t get a higher recommendation than that. All the yogis they were offered to loved them as well, so I have a feeling these will be making an appearance at at all my seasonal events, not just Christmas.
They are also remarkably simple to make. So what’s not to like?
For those of you who asked for the recipe, here it is.
Ingredients
- 300g ground almonds
- 220g caster sugar
- 1/8 teaspoon of almond essence (or to taste)
- 3 large (105g) egg whites
- flaked almonds for decoration
- icing sugar to dust
Method
- Preheat the oven to 180 Degrees (360F)
- Line oven trays with non-stick baking paper
- Combine ground almonds, sugar and almond essence in a large bowl. Add the lightly beaten egg whites and stir until the mixture forms a firm paste.
- Roll small balls of the mixture, about 3cm in diameter in the flaked almonds
- Place the balls onto baking paper-lined oven trays and gently flatten them a little
- Bake for about 12-15 minutes or until they are lightly browned.
- Cool on racks. Dust with icing sugar.
The cookies can be stored in an airtight container for up to a week. I’m told they also freeze well, except they’ve always been devoured so quickly in our house I’ve never had the chance to test this! I hope you enjoy them.
